Jiro dreams of Sushi is the Japanese documentary about a 95-year old sushi chef, Jiro Ono who is considered to be the greatest sushi chef of all time. He runs a Michelin 3-star rating restaurant (highest possible rating) in a Tokyo subway station and have only 10 seats. The tasting menu is roughly 20 pieces of Sushi, costs around 21,000 INR per person and lasts about 20 minutes. Usually one has to make a reservation one month before taking the meal.

Jiro is making Sushi ever since he was 9. With years of practice, improving bit by bit he has always yearned for perfection relentlessly. The octopus, the rice and the steam all are cooked with near precision. Customers get nervous eating the food which Jiro has created, trying to appreciate the dish in limited time.

By doing the same thing over and over again, one improves with marginal gains every time. No one knows where is the top but climbing continuously towards it on a daily basis ensures improvement and builds confidence. Sure, its not easy and there will be distractions but then what comes easy in life!
